Every year around Thanksgiving when I start to dream about yummy turkey dinner I can’t help but think about the Swedish Chef from the Muppets and his escapades with the Torkey. It always makes me giggle.
This year don’t pass on the gravy just because you can’t tolerate wheat or gluten. Here’s a very easy recipe to make Gluten Free Gravy to slather over your Torkey. It will only take about 15 minutes, so even if you are going to someone else’s home that will have gluten on their table, you can offer to bring your own.[box type=”shadow”]
Gluten Free Gravy
2 1/4 c chicken broth (or homemade chicken stock), divided
2 Tbsp your favorite Gluten Free Flour like Bobs Red Mill, plus more if necessary
3-4 sprigs fresh thyme, leaves separated from stem and minced
several leaves fresh sage, minced small
salt and pepper
1. In a small saucepan, bring 2 cups chicken broth or stock to a boil over medium heat.
2. While broth is heating, combine remaining broth with 2 Tbsp millet or rice flour in a small bowl or mug. Stir thoroughly, adding more flour as necessary until you have a thick slurry.
3. When broth in pan starts to boil, reduce heat to low and slowly add the flour-broth mixture and the herbs. Season generously with salt and pepper. Stir constantly for a few minutes to ensure that lumps don’t develop. Gravy should be bubbling gently so adjust heat if it isn’t.
4. Cook to reduce to desired consistency and thickness. Taste for salt and pepper and adjust as necessary.
Serves 4 to 6.
